at how many months can they sit up and use toys such as their exersaucer? do they need complete head stability and the ability to sit?

Yes, they need good head and neck control to be in an exersaucer or jumper. I would say about 4 months I started using the exersaucer for a few minutes a day and just stuffed some pillows in the seat to help with sitting up.

at 4 months with pillows underneath the jumperoo but they didn't really know how to use them until they were 6 months. more like 7 months will they be able to sit up on their own unassisted.

Mine started using it around 4 months, but only for ~5 minutes at a time. They actually did it more often at daycare -- the teachers would stick a pillow behind them so they didn't totally slump down. When they get cranky, that's when they need to get out! But it makes a nice change of scenery for them even if just for a few minutes.

Each child is different, but once they have good neck and head control you can try it out. I used blankets for a while to help them fit better in the seat.

like everyone else, we started on the exersaucer at around 4 months, i put blankets around them to help them stay more upright. and they never wanted to stay in for more than 5 minutes.

Head & neck stability are a must. Like most people I padded the area around their body with pillows or blankets to give them a bit more stability there, but if they can't hold their neck & head well, it doesn't help. I think we were also around 4 months.
