Went to my GD class yesterday

Well, after having to get up much earlier than I normally do - and actually BE somewhere at 8am, I attended my GD diabetes class.

I was surprised to see that the dietician is allowing me a good amount of carbs per meal & snack as long as I couple it with protein and fats. The downside is that my fasting numbers are ALWAYS high. Ideally they shouldn't be more than 95 and they are almost always over 110 - 130.

The problem I have is the protein. I can eat carb of all kinds, but the coupling with protein is really hard for me. I don't eat a lot of different "meats" so that leaves cheese, peanut butter and eggs for the most part. Needless to say, I am eating a bit of PB!

Best thing is that I DO NOT have to give up my cereal - just can't eat as much. I DO have to give up ALL juice BUT the diet V8 Splash is okay - and it tastes REALLY GOOD and is only like 3g carbs per 8oz. So, I already have some in the house and am THRILLED to be able to drink it. If I manage things right, I can still drink 8oz of light OJ a day...

I go see my OB next Wednesday to look over my numbers. If she feels it necessary to RX insulin, I can pretty much go straight to the nurse at the GD clinic and get instructed by her on the same day. If not, I have an appt with the GD dietician on Thursday to go over my food, readings, etc.

Overall, I am pleasantly surprised as to what I CAN eat.... but my biggest downfall is my evening eating. We are usually done with dinner by 630pm, and I can have a snack at night - but like last night, at 830pm I was STARVING (and I ate plenty at dinner time), and then STARVING again at 1030pm. Around midnight I was hungry again. My problem is that there are only so many combos of protein/carbs I will eat. I can have protein no problem, but even that is limited when you are talking about eating things at night. I've looked over the suggestions the dietician gave me and nothing looks too incredibly appealing. I ate more protein last night and not as much carbs as I was allowed and my reading this morn when I got up was still 121. UGH.

Anyhoose - for those who were interested - that's where I am right now. My brain just isn't too functional as far as being creative with food (a real prob since I got pg!), so I am really going to have to rack my brain for some food ideas that are good for me....

I'm glad that you got some good news as far as you're juice and some of the foods you can eat. It is so hard when you have to modify the things you like to eat. I have an issue with eatting enough meat too, but I eat beans and cheese, and eggs. Good luck.

Wow, that was an early class!!

Glad you got good news. I had a hard time coming up with proteins too for night time and had a lot of peanut butter toast (with bread that had no flour) before bed.

Do you like nuts or pumpkin seeds? Pumpkin seeds have lots of protein - I think for 1/4 cup of pumpkin seeds it has 19grams of protein or something if I remember right. You can buy them where you buy sunflower seeds usually. Sunflower seeds are also fairly high...but not quite as high as pumpkin seeds - or as filling.
I also snacked on popcorn...as long as it was airpopped (not microwave) it didn't hurt my numbers and I found it filling.

Oh, wanted to add about the popcorn...I would buy the different flavourings and have different flavour popcorn...my fave was salt and vinegar. The white cheddar was good too and sour cream and onion was OK.
