NEW fingerfood my 1 yearolds LOVE!

    I stumbled on this yesterday by accident, when I was cooking something for myself and decided to let the babies try...

    Chicken Enchiladas with cheese

    I didnt make it as "healthy" as I should have had I known I would be sharing... :blush: ... says the mother who is working her butt off to loose weight! HA!

    I took 2 white flour tortillas shredded mozzerella cheese and colby cheese on one and then pulled apart a left over chicken breast from dinner the night before, then topped it with the other tortilla. I heated up some olive oil in a pan and fried it on both sides until brown and cheese was melted. I cut it into triangles (like a pizza) and it was so yummy. I cut the babies' up into little bit sized chunks but next time I think I will just let them eat a "slice" and see how they do. Anyway they shoved aside their pears and gobbled it up like it was the best thing ever!!

    To make it healthier I think you could bake or broil it in the oven and flip it once.

    Yum, i'm hungry just reading that!

    my girls love quesadillas also; sometimes i will add some pureed veggie chili (beans, carrots, tomatoes, onion) and put some on. they also like salsa!

    For a little less fat you could lightly spray a non-stick pan with some olive or canola oil; you'd end up using less oil and it would still be crispy and delish!

    Mine like quesadillas also! If you want to make it healthier (although I think what you made is fine!), we do use whole wheat tortillas and sometimes corn tortillas (although I'm sure the corn ones aren't that healthy either, but they taste good!). We also have tried refried beans and black beans, tomatoes, spinach, and onions. Of course, the only one they absolutely GOBBLED up was the one I got them at Taco Bell one time..of course!

    You don't have to broil it or bake it to make it healthy - just spread a very thin coating of extra virgin olive oil in the pan using a paper towel that you have sort of drenched with the olive oil. That way they get all the good fats of olive oil and mom still gets the ease of making quesadillas on the stove top. We also add in other stuff, beans, veggies, or anything else I am trying to hide from them that they wouldn't otherwise eat. We eat this for lunch a lot!! lol

    My son has a wheat/gluten intolerance, so I buy brown rice tortillas in the cold case at Whole Foods. They are actually yummier than flour tortillas and for those of us trying to lose weight, these aren't in the bad "white flour" category like flour tortillas are.
