Need help with green veggies

    I'm stuck in a rut -- there must be something from the "green" family that I can feed them besides steamed broccoli and frozen peas. (Amy eats broccoli, sometimes -- they both eat peas.) Amy was a fan of asparagus in the spring, but I don't dare buy it this time of year. What veggies do you feed your toddlers? And how do you prepare/serve them?

    The staples here are:

    broccoli
    green beans
    yellow squash and zucchini
    asparagus
    avacado
    kale
    sugar snap peas

    In the winter I make a lot of things with eggplant too. I'm still getting good asparagus at Kroger, but you can buy it frozen as well. Mine love it when I saute squash and zucchini with mushrooms, garlic and onion.

    Cucumber, spinach, mixed salad greens, swiss chard, snow peas, okra, zucchini, brussels sprouts, cabbage, bell pepper... I'm sure I'm forgetting something. I also use flat leaf parsley, cilantro, and basil from the garden.

    My guys tend to prefer their veggies cooked lightly or not at all. They always love a dipping sauce.

    I posted a recipe for "[post="376131"]Spinach Balls[/post]" over in the Cooking Forum today. These went over well.

    We do creamed spinach (I use frozen spinach and add milk, cheese and a little garlic powder), green beans, asparagus (they only like it roasted), and sometimes they even eat cabbage. And there are these great spinach and broccoli pancakes in the frozen food section (either in the kosher area or the organic foods) -- the girls love these.

    Mine won't have anything to do with zucchini. But I keep trying.

    brussel sprouts (they absolutely love these)
    green beans
    zucchini
    cucumber
    celery
    creamed spinach
    cabbage

    plus the others you mentioned

    We love the spinach balls. I actually make them with the girls...they LOVE to help. And then I just stick them in the freezer and take them out as I need them. They gobble them up.

    Is there frozen asperagus in your supper market? Frozen veggies are often more nutricious than the out-of-season-fresh stuff that is not so fresh and very well travelled anyways. Also the price generally stays the same rather than flucuating like the fresh produce does.

    My girls love salads, but I think that caught on around two years old so yours might be a bit young yet. Find a dressing they love and they will eat anything with that dressing on it! (strangely enough mine love blue cheese ;) )

    I also make alphabet soap (or other pasta shapes) with very finely chopped chard in it and the gobble that up--chard plain they won't touch.

    Mine also don't like zucchini straight up, but I make pasta sauce, then BLEND the sauce that way the eat it all.

    Spinach dip is also a favorite. with raw veggies to dip in it (carrots, broccoli, cucumber, I put out celery too, but they usually don't touch that) or spread it on whole grain crackers.

    I rarely make mac and cheese, but if I do it's always got broccoli or diced green beans in it.
