How long do you keep open canned food?

    Isn't there some terrible disease from eating opened canned food for too long...botchelism (sp?), I think. Each night when I save the twins' left over green beans I get a little scared. Anyone know for sure?

    I don't think you are supposed to keep it in the can. Something about the aluminum, but I don't know for sure. I usually put leftovers in a tupperware dish and if it isn't eaten on day two then I toss.

    Okay, thanks! So, the problem is leaving it in the can, not the food being left over. I always transfer it to another container, too. I will stop worrying now.

    I never leave them in the open can. Once it's opened I would transfer the unheated leftovers to a storage container and use within a day or two. Botulism can be caused by canned foods, but that is why you aren't supposed to use bulging cans or cans that have been damaged. Also, look for bubbles in the top of the can when you open it. Interestingly enough you can get botulism from other foods that are grown in anaerobic environments - like potatoes! So be sure to wash potatoes thoroughly before you pierce them with a fork, etc!

    They are ok for leftovers as long as you don't store them in the open can...just transfer to another safe dish or bowl.
