When is safe? I googled, but get conflicting info. I don't want to just give them honey, but would like make homemade granola bars. They will be 12 months next week!

After 12 months, I think it's safe. Just going by my recollection though!

Oh, and I think it's safe cooked in things earlier? I remember looking into honey nut Cheerios and I think concluding I didn't need to wait to a year? I can't remember stuff anymore.

12 months. Botulism. Not sure what the one week would do, but I know for sure it's been 12 months of age. :)

There can be botulism spores in honey. They can't survive the stomach acids in most human guts, and they're developed by a year. I think a year is a conservative estimate so you're probably good to go.

Botulism spores can survive virtually any kind of cooking process, but they can't live in acidic environments and botulism itself doesn't come out of spore form in oxygen rich environments.
